2 Ingredient Cheesy Pickle Chips

I am a big fan of cheese in any form.. plain, on crackers, fried, you name it! I have been known to throw some shredded cheese on a skillet from time to time as a delicious crispy, cheesy snack. I’ve recently been playing around with different add ins, and pickles and jalapenos are at the top of the list! Typically, when I’m making my snack on the stove, SOMEONE will ask for me to make some for them as well. So in stead of making multiple batches on the stove, I got smart and decided to try it in the oven and OH MY GOODNES! These turned out absolutely perfect. The entire batch was gone within minutes!

How to Make 2 Ingredient Cheesy Pickle Chips

Line an oven safe baking dish with parchment paper. Cover the bottom of the dish with shredded mozzarella cheese. Place pickles about an inch apart on top of the cheese. Sprinkle more mozzarella cheese on top to cover the pickles. Bake for 12-15 minutes on 400 degrees F (checking occasionally). Cut into chips with a pizza cutter and enjoy!

These Cheesy Pickle Chips taste like fried mozzarella sticks but without the guilt!

Ingredients

  • 2 cups shredded mozzarella cheese
  • 12 Dill pickle chips

Instructions

  • Line a 9×9 baking dish with parchment paper
  • Cover the bottom of the dish with 1 1/2 cups of mozzarella cheese
  • Add pickles 1 inch apart
  • Cover the pickles with the remaining mozzarella cheese
  • Bake at 400 degrees F for 12 minutes, or until slightly browned and crispy.
