I’ve found out of the years that beets have a bad reputation, but I can’t figure out why! Beetroots are a vibrant purple-ish red vegetable best known for its earthy flavor. They are packed with nutrients and vitamins and are known for many health benefits, including lowering blood pressure. I’m convinced that anyone who says they “don’t like beets,” hasn’t actually tried them… and they definitely haven’t tried this delicious 3-ingredient beet salad.

Beet Salad Ingredients

This recipe can be thrown together in less than 5 minutes and is great on top of some mixed greens or alone as a side dish. I also enjoy bringing this beet salad to work for a quick snack. I can make a large batch on Sunday evening and it stays fresh and delicious all week.

Earthy beets and tangy balsamic vinegar create a perfect flavor combination in this beet salad recipe.

Ingredients

  • 3 cans beets drained & chopped
  • ¼ cup balsamic vinegar
  • ½ cup crumbled feta cheese
  • salt & pepper to taste

Instructions

  • Open the cans of beets and drain the liquid
  • Chop up the beets into bite size pieces and add to a large bowl
  • Pour balsamic vinegar over the beets and stir until fully coated
  • Chill for at least 2 hours in the fridge to allow flavor to absorb
  • When ready to serve, sprinkle the feta cheese on top and enjoy!
