As a family that enjoys cooking, we don’t always stick to “healthy” or “low-carb” recipes. As a busy family on the go, we are often making “quick and easy” or “low ingredient” recipes that are delicious and the whole family will love. This Bruschetta Chicken, however, is quick and easy AND checks off the low-carb box. We absolutely love this recipe and I hope you will too.
Ingredients:
Thin Chicken Breast
Roma Tomatoes
Balsamic Vinegar
Minced Garlic
Grated Parmesan Cheese
Fresh Mozzarella
Salt & Pepper
Optional: balsamic glaze
Optional: fresh basil
How To Make Bruschetta Chicken
Season the chicken breast with salt & pepper
In a bowl, add the chopped tomatoes, balsamic vinegar, minced garlic, parmesan cheese, salt & pepper. Stir until tomatoes are fully coated. Set aside
Cook the chicken in a skillet over medium heat for 4-5 minutes per side (until 160 degrees F)
Once the chicken is cooked, add the sliced mozzarella cheese and toss in the oven on broil for a couple minutes, until the cheese is melted and starts to brown
Once the cheese is melted, remove from oven
Add chicken to a plate and top with tomato mixture
Optional: drizzle with balsamic glaze and add fresh basil as garnish

Ingredients
1 1/2lbschicken breastthin
4-5Roma tomatoesdiced
2tbspbalsamic vinegar
1tbspminced garlic
1/4 cupgrated parmesan
fresh mozzarellasliced
salt & pepperto taste
fresh basil
balsamic glaze
Instructions
Cut or pound chicken breast to 1/4-1/2 inch thickness. Season with salt & pepper
Dice up the tomatoes
In a medium sized bowl, add diced tomatoes, balsamic vinegar, minced garlic, parmesan cheese, and salt/pepper to taste
Heat a skillet to medium heat. Add chicken and cook for 4-5 minutes on each side (until cooked to 160 degrees F)
Top the chicken with sliced mozzarella and melt the cheese. You can melt by adding a lid to the pan or place in the oven on broil until melted & brown.
Once the cheese is melted, add chicken to a plate and top with a spoon full of tomato mixture.
Optional: drizzle with balsamic glaze and garnish with fresh basil.
