As a family that enjoys cooking, we don’t always stick to “healthy” or “low-carb” recipes. As a busy family on the go, we are often making “quick and easy” or “low ingredient” recipes that are delicious and the whole family will love. This Bruschetta Chicken, however, is quick and easy AND checks off the low-carb box. We absolutely love this recipe and I hope you will too.

There are many different ways to cook the chicken for this recipe, and all of them will turn out equally delicious! Take a look at the options below, and feel free to tweak this bruschetta chicken recipe as necessary.

Bruschetta Chicken

Bruschetta Chicken is a delicious, low carb meal that will have you feel like you're getting a taste of Italy!

Ingredients

  • 1 1/2 lbs chicken breast thin
  • 4-5 Roma tomatoes diced
  • 2 tbsp balsamic vinegar
  • 1 tbsp minced garlic
  • 1/4 cup grated parmesan
  • fresh mozzarella sliced
  • salt & pepper to taste
  • fresh basil
  • balsamic glaze

Instructions

  • Cut or pound chicken breast to 1/4-1/2 inch thickness. Season with salt & pepper
  • Dice up the tomatoes
  • In a medium sized bowl, add diced tomatoes, balsamic vinegar, minced garlic, parmesan cheese, and salt/pepper to taste
  • Heat a skillet to medium heat. Add chicken and cook for 4-5 minutes on each side (until cooked to 160 degrees F)
  • Top the chicken with sliced mozzarella and melt the cheese. You can melt by adding a lid to the pan or place in the oven on broil until melted & brown.
  • Once the cheese is melted, add chicken to a plate and top with a spoon full of tomato mixture.
  • Optional: drizzle with balsamic glaze and garnish with fresh basil.
  • Serve with a side of pasta or a salad. Enjoy!
