Chicken Broccoli Casserole
This Chicken Broccoli Casserole is the perfect, quick and easy weeknight dinner that can be thrown together and in the oven in minutes! It is a fan favorite with the adults and kids in our house.
Whether you’re looking for an easy way to use up some leftover chicken breast or are just not in the mood to slave away in the kitchen after a long day at work, this is the recipe for you! It is super versatile and a great way to use up any leftover poultry and veggies. The combination of broccoli, chicken, cheese & rice is unbeatable and I get requests for this almost weekly.
Ingredients:
Instant Rice, cooked
Broccoli
Cooked, chopped chicken breast – you can make your own chicken by boiling or cooking in the Crock Pot, or you can use canned or rotisserie chicken!
Sour Cream
Cream of Chicken Soup
Shredded Cheddar Cheese
Salt & Pepper
Ritz Crackers
Butter
How to Make Chicken Broccoli Casserole
Preheat the oven to 350 degrees F. Cook 2 cups of Instant (minute) rice according to instructions. Set aside. Cook 2 cups of broccoli. In a large mixing bowl, add rice, broccoli, 2 cups chopped chicken breast, 1/2 cup sour cream, 1 can Cream of Chicken soup, and 1 cup shredded cheddar cheese, salt & pepper. Stir until everything is well mixed. Pour mixture into a 9×13 casserole dish. Top with shredded cheese, crushed Ritz crackers, and a drizzle of melted butter. Bake for 30 minutes and enjoy!
Substitutions
Chicken – canned, rotisserie, baked, boiled, slow cooked. Or Turkey
Shredded Cheddar – any shredded yellow cheese is fine
Prep: Cook 2 cups of instant rice. Cook 2 cups of broccoli. Cook/Chop 2 cups chicken breast
In a large mixing bowl, add rice, broccoli, chicken, sour cream, cream of chicken soup, 1 cup shredded cheese and salt/pepper to taste. Stir until well mixed.
Pour the mixture into a 9×13 baking dish. Press down until spread evenly
Sprinkle additional 1/2 cup of cheese, crushed crackers & drizzle melted butter
