Now I typically try to stay away from fried foods, but there is just something about a good, homemade chicken cutlet served over some pasta. This Chicken Parmesan recipe (using ground chicken patties) is easy to make and doesn’t take much time at all. Using ground chicken gives you the ability to make the patties as big or as small as you’d like, and they fry up absolutely perfect every time.

How to Make Chicken Parmesan

  1. Start by adding your ground chicken and spices to a mixing bowl and mix until spices are fully incorporated.
  2. Separate the chicken into 4-5 balls and smash into thin patties. Place the patties in the freezer for about 20-30 minutes for easier handling (but not required).
  3. Add your favorite frying oil to a dutch oven or deep fryer and heat over medium to medium high heat until oil reaches 350 degrees F.
  4. In one plate with sides, add whisked eggs. In another plate add bread crumbs, parmesan cheese, and a pinch of salt & pepper.
  5. Dip the patties into the egg mixture, covering fully. Then dip into bread crumb mixture making sure every bit of the chicken patty is coated.
  6. Add the chicken patties to the oil and fry until the outside is browned & internal temp reaches 160 degrees
  7. Once cooked, add the chicken patties to a cookie sheet. Top with marinara sauce & shredded or sliced mozzarella cheese. Broil in the oven for a few minutes, until the cheese is melted and bubbly on top.
  8. Serve over your favorite pasta or with a side salad.

  • 1 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella
  • 1 jar spaghetti sauce
  • 2 eggs

Instructions

  • Add frying oil to Dutch oven or deep fryer and heat on medium high heat to 350 degrees F. You'll want a couple inches of oil to ensure the chicken is covered.
  • Add ground chicken and spices to a mixing bowl and mix until well combined.
  • Separate chicken mixture into 4-5 balls and smash into patties. Place patties in the freezer on parchment paper for 20-30 minutes for easier handling (not required).
  • Add whisked eggs to one plate and the bread crumbs/parmesan into another plate.
  • Dip the patties into the egg mixture, covering completely. Then dip into bread crumb mixture making sure that every bit of the chicken patty is coated.
  • Add the chicken patties to the oil and fry until the outside is browned and internal temperature is 160-165F
  • Once cooked, add the chicken patties to a cookie sheet. Top with marinara sauce & shredded mozzarella cheese.
  • Broil in the oven for a few minutes, until the cheese is melted and bubbly on top.
  • Serve over your favorite pasta or with a side salad.

Storing & Reheating

STORE – Wait until the chicken is fully cooled before storing in the fridge. Place in an airtight container or Ziploc bag and keep in the fridge for up to 4 days.

REHEAT – When ready to enjoy the leftovers, you can reheat them one of many ways (below):

  1. Air fry at 350 degrees for 3-5 minutes.
  2. Bake in the oven at 325 degrees for 7-10 minutes.
  3. Microwave on high for 1 – 1 1/2 minutes.
