This Corn Casserole is one of my absolute favorite side dishes to make for any holiday or summer barbeque get together. I have been making it for years, and I always get asked for the recipe!

I will admit.. I am a sucker for a good side dish. I am the girl who shows up to any holiday or family gathering excited for the side dishes! Broccoli casserole, rolls, scalloped potatoes.. count me in. This Corn Casserole recipe has actually become the side dish I MOST look forward to. I enjoy making it (because it is SO easy to make) and devouring it.

How to Make Corn Casserole

I have been making this delicious corn casserole as a side dish for get togethers and pot lucks for over 10 years. I have heard all of the negative comments about how “it doesn’t look very good” or “it looks like mushy cornbread” and while those comments may be true.. I promise you aren’t going to want to miss out on giving it a try. My husband was the biggest critic until he tried it and now he requests it for every holiday!

Corn Casserole

This delicious corn casserole recipe is a sweet and savory side with a warm and fluffy texture.
Prep Time 5 minutes
Cook Time 55 minutes
Total Time 1 hour
Course Side Dish
Servings 10

Ingredients
  

  • 1 box Jiffy Corn Muffin Mix
  • 1 can corn, drained
  • 1 can creamed corn
  • 1 cup sour cream
  • 1/2 stick butter melted
  • 1 cup shredded cheddar cheese optional

Instructions
 

  • Preheat oven to 350 degrees F
  • In a large mixing bowl, mix together all of the ingredients
  • Add mixture to a greased 9×13 dish
  • Bake for 50-60 minutes or until fully cooked through and starting to brown on the top
  • Let corn casserole sit for 10 minutes before serving
