I don’t know about you, but I LOVE a good soup. There is nothing better than a bowl of soup on a chilly or rainy day. There are so many good soups out there, but they are often times a bit of a pain to make. They either have too many ingredients or involve cutting and prepping a ridiculous amount of vegetables and let’s be honest.. sometimes I just don’t have the time or patience for that.

Just toss the ingredients in the Crock Pot and let it do all the work!

How to Make Crock Pot Potato Soup

  1. In a large Crock Pot, add hash browns, diced onion, bacon bits, garlic, chicken broth, and salt & pepper. Cook on high for 3 hours.
  2. Remove lid. Add 1-2 tbsp of corn starch and 2 cups shredded cheddar.
  3. Cook an additional 30 minutes until the soup thickens a bit and the cheese is melted.
  4. Add to a bowl and top with your favorite loaded potato toppings!

Ingredients

  • 30 oz Frozen Hash Browns
  • 1/2 Onion diced
  • 1/4 cup Bacon Bits
  • 1 Tbsp Minced Garlic
  • 4 cups Chicken Broth
  • 1-2 Tbsp Corn Starch
  • 2 cups Shredded Cheddar
  • Salt & Pepper to taste

Instructions

  • In a large Crock Pot or slow cooker, add hash browns, diced onion, bacon bits, garlic, chicken broth, and salt/pepper to taste. Stir.
  • Cook on high for 3 hours.
  • Remove lid. Add 1-2 Tbsp corn starch and shredded cheddar cheese. Stir well.
  • Cook an additional 30 minutes until the soup thickens and the cheese is melted.
  • Add to a bowl and top with your favorite loaded potato toppings!
