I am always looking for a quick and easy meal prep that will last throughout the week. Simply make this chicken on Sunday and add to a small bowl of rice and you have a fantastic, heat up on the go lunch for the entire week. I seriously LOVE this chicken, and never seem to get tired of it.
You will start by adding your chicken breast to the crock pot and sprinkle in the taco seasoning. Pour in the can of Rotel, queso, and chicken broth (mixing together as well as you can). Cook on high for 3-4 hours or on low for 6-7 hours. Shred the chicken and remove most of the liquid (leaving just a bit behind). Stir everything together so the chicken is fully coated in queso mixture. Serve in a tortilla or over rice as a burrito bowl!
