This easy soup recipe is always a crowd pleaser, and it uses affordable ingredients!

I don’t remember where I first stumbled upon this recipe. It was years ago, but I’m sure I found it while scrolling through Pinterest.. I actually made this creamy, cheesy soup recipe the first time for a work pot luck party! It was a hit and multiple people asked for the recipe before I even had the chance to try it. It has been a regular weeknight dinner meal ever since!

How to Make Crockpot Tortellini Soup

  1. Start by browning the ground sausage in a skillet over medium heat until fully cooked. Drain the grease.
  2. Add the browned sausage, diced tomatoes, vegetable broth, and cream cheese into you large slow cooker. Stir and cook on low for about 4 hours.
  3. Stir in the fresh spinach and frozen tortellini and cook for another 20-30 minutes, or until the tortellini is fully cooked.
  4. Serve right away as the tortellini will start to get soggy if left in the crock pot too long.
  5. Store in an airtight container in the fridge for up to 3 days.

This creamy, cheesy soup is so easy to make and is perfect for a chilly, fall dinner.

Ingredients

  • 16 oz bag frozen cheese tortellini
  • 1 small bag fresh spinach
  • 1 lb ground italian sausage browned & drained
  • 2 cans Italian style diced tomatoes
  • 4 cups vegetable broth
  • 8 oz cream cheese block
  • salt & pepper to taste

Instructions

  • Brown the ground sausage in a skillet and drain grease
  • In a large crock pot, add sausage, diced tomatoes, broth, and cream cheese cut into cubes.
  • Cook on low for 4 hours until the cream cheese is melted and give it a stir.
  • Add in the spinach (I like to chop mine up) and frozen tortellini and cook for another 30 minutes or until pasta is cooked.
  • Stir together & enjoy!

Notes

The tortellini will continue to cook if left in the crockpot, so it is best to serve right away and remove any leftovers from the crockpot.
