If we are going to go out to dinner (which we try not to do too often), my vote will usually be Mexican! Mexican food is my favorite type or style of food, and I am always looking for new and fun ways to switch things up from the typical tacos and quesadillas. Mexican food is just so easy to make and there are so many varieties that we eat it A LOT at our house. Whether you like beef, shredded chicken, ground chicken, or even chorizo, these will not disappoint!

My favorite part about this meal is that I usually have all of the ingredients on hand, so I don’t have to go out of my way to go grocery shopping to make this recipe!
Corn Tortillas

Taco Seasoning – the store bought stuff is absolutely fine for this recipe, or you can check out this healthy,homemade taco seasoningrecipe from Simple Joy.
Salsa – Use a thicker salsa (like Picante salsa) as you don’t want it to get soggy
Canned Corn
Refried Beans
Black Beans
Shredded Cheese – I like to use cheddar or a Mexican blend
Easy Taco Tostada Swaps
Instead of ground beef, you can use:
ground chicken
shredded chicken
rotisserie chicken
chorizo
no meat
Instead of corn tortillas, you can purchase store-bought hard tostada shells
How to Make Tostadas
Start by laying the corn tortillas out in a single layer on a cookie sheet. Brush them generously with vegetable or avocado oil (they should be lightly coated).
Bake the corn tortillas at 450 degrees for 3-5 minutes on each side until nice and crispy and the edges start to brown.
While the tortillas as baking, you can start to cook your meat mixture. In a medium sauce pan, cook the ground beef until brown. Once cooked, add in the taco seasoning, salsa, corn, and black beans, stirring occasionally until well combined.
Add about 1/2 cup of the meat mixture to each tostada and top with shredded cheese (as much as your heart desires). Put back in the oven for another 5 minutes or so or until the cheese is melted.
These tostadas are a quick & easy spin on everyone's favorite Mexican food! In less than 30 minutes, you have crispy, delicious tostadas!

8corn tortillas
1tbspvegetable or avocado oil
1/2can corndrained
1lbground beef
2-3tbsptaco seasoning
1/2canrefried beansoptional
1canblack beansdrained and rinsed

Instructions
Preheat oven to 450 degrees
Cook the ground beef until browned, drain, & mix in taco seasoning
Add corn tortillas in an even layer to a cookie sheet. Brush with oil on both sides. Bake for 3-5 minutes on each side, until edges are golden brown.
To the ground beef mixture, add in salsa, taco seasoning, black beans, and corn. Stir until warm and well combined.
Add a tablespoon of refried beans & 1/2 cup of mixture to each tortilla. Top with shredded cheese and cook in the oven for another 5 minutes (until cheese is melted).
Top with your favorite toppings and serve with Mexican rice and refried beans!
