I’ve seen this recipe called many different things over the years. I’ve seen No-Peek Chicken, No-Peek Chicken and Rice, or Forgotten Chicken.

This 5 ingredient easy dinner recipe is made with instant rice, chicken breast, onion soup mix, and canned soup. Could it get any easier? This dump and bake recipe cooks in the oven for approximately 1 hour and turns out so juicy and delicious every time! Despite only being 5 ingredients, this is in my top 5 favorite, flavorful dinner recipes.

Substitutions

I don’t typically deviate from this recipe (just because it’s SO good), but there are a few substitutions that would be just as yummy! If you don’t have both canned soups on hand, you can add 2 of one flavor. I have a picky husband who doesn’t like mushrooms (and insists that you can taste them in the soup), so I have tried 2 cream of chicken soups and it turned out just as good.

Why is this called Forgotten Chicken?

Just like the name entails, once you cover the pain with foil and pop in the oven, you can “forget” about it until the hour is up! The foil helps keep in all of the delicious flavors and moisture to create the perfect, tender chicken breast we are looking for!

Forgotten Chicken

Cook Time 1 hour

Ingredients
  

  • 1 lb chicken breast
  • 2 cups Minute instant white rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water
  • 1 packet Lipton onion soup mix

Instructions
 

  • Grease a 9×13 baking dish
  • In mixing bowl, combine both canned soups, can of water, and Minute rice
  • Pour rice mixture into greased baking dish
  • Add chicken breasts on top of rice mixture
  • Sprinkle Lipton onion soup mix over entire dish
  • Cover with foil
  • Cook at 350 degrees for 1 hour (until chicken reaches 165 degrees)
