Healthy Peanut Butter Cookies

There is nothing better than an easy, low ingredient, healthy recipe that is absolutely delicious! These Healthy Peanut Butter Cookies are the perfect after school snack or breakfast on-the-go if you are watching your sugar intake!

It sure seems like you can make just about any delicious, healthy recipe with peanut butter. A few of my absolute favorites are no bake peanut butter cookies and peanut butter chocolate protein bites (yum)! Peanut butter is so versatile and is a great source of healthy fat and protein, keeping us full longer. These cookies are super easy to make and you probably already have all of the ingredients on hand.

How to Make

Add the peanut butter, sugar free syrup, and egg into a large mixing bowl and mix well. Next, add in the oats, cinnamon, and any add ins that you chose. Stir well. Add tablespoon size scoops onto a lined cookie sheet. Press down until flat. Bake at 350 degrees for 12 minutes.

Ingredients
  

  • 1 cup peanut butter
  • cup sugar free maple syrup
  • 1 large egg
  • 1 ½ cups old fashioned oats
  • dash cinnamon optional
  • ¼ cup sugar free chocolate chips optional

Instructions
 

  • In a large mixing bowl, stir together peanut butter, maple syrup, and an egg until well combined.
  • Slowly stir in the oats and any add ins such as cinnamon and chocolate chips
  • Scoop mixture by the tablespoon onto a parchment paper lined cookie sheet.
  • Flatten lightly with a spoon
  • Bake at 350 degrees for 12 minutes.

Storing

I like to store these in the fridge and grab them as a snack or treat on the go! They will last in an airtight container or bag in the fridge for up to 5 days.
