I have tried many different breakfast casserole recipes, and I continue to come back to this one. A coworker of mine used to make this and bring it in when we had to work Saturdays. When she resigned, I begged her for her famous sausage egg casserole recipe and was floored when I found out how easy it was to make! The secret ingredient that really levels up this breakfast casserole is the Pillsbury Crescent Rolls.
I like to make the sausage the night before so it’s all ready to be tossed in a baking dish and thrown in the oven. You simply lay down the sheet of crescent dough in the pan, add the layer of pre-cooked sausage, then the eggs and top with cheese. It’s THAT EASY!
As I mentioned, this recipe only uses 4 simple ingredients.
First, preheat your oven to 350 degrees F. Lay out the sheet of crescent roll dough in the bottom of a 9×13 baking dish, pressing out any holes and making sure the sides are pressed down so the egg doesn’t get through. Cover the crescent dough with the browned and drained ground sausage. In a separate bowl, whisk the 6 eggs until beaten. Pour the egg mixture over the sausage and sprinkle shredded cheese on top. Bake at 350 degrees for 30 minutes. I like to broil mine for a minute or so at the end to get the cheese nice and bubbly.
Although this is my favorite, this recipe is very versatile!
Leftovers can be stored in the refrigerator in an airtight container for up to 4 days. To reheat the sausage egg bake, pop it in the microwave until it reaches the desired temp. You can also warm it up in the oven at 300 degrees until warm. I like to take this to work for lunch on busy weeks and I just heat it up in the microwave!
