Sugar Free Blueberry Muffins
It’s hard to believe these warm, delicious blueberry muffins are GUILT FREE. Made with a sugar substitute and unsweetened applesauce, these muffins are the perfect make-ahead grab & go breakfast for the week!
This muffin recipe is one of my favorites for so many reasons. They are easy to make (with ingredients you probably already have lying around), and they turn out perfect every time! You can easily substitute many different ingredients, such as the sugar or add in’s, and it’s a great way to use up all those extra berries in the fridge before they go bad! Just mix everything up in a bowl and you’re ready to bake!
Sugar Free Muffins Ingredients:
1 1/2 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
1 tsp vanilla
1/3 cup unsweetened almond milk
1/2 cup sugar alternative (monk fruit or erythritol)
1/3 cup unsweetened applesauce
1 cup berries of choice (frozen or fresh)
Substitutions:
As I mentioned, there are many ways to switch up the ingredients in this sugar free muffins recipe. Below are some of my favorites.
Sugar Substitute: If you are not watching your sugar intake, using regular white sugar (same measurements) will be just as delicious
Unsweet applesauce: You could easily use mashed bananas or greek yogurt if you do not have unsweetened applesauce on hand. Regular applesauce will work also if you are ok with the added sugar
Add in’s: My go-to for this recipe is usually blueberries, but you can add in ANY mix in’s that you have on hand! Strawberries, raspberries, mixed berries, chocolate chips, Lily’s no sugar added baking chips, etc!
